Summer Salad Success

I try to share pictures of what I eat on the blog, and not all of it is really worthy of its own picture.  Sometimes I cook something and can’t wait to share it with you, and this is one of those recipes.

My recipe book is full of ideas, recipes and pictures I pick up along the way, and last night I decided to take a look through it to find some inspiration for dinner. 

I came across a recipe I’ve used a million times for citrus honey vinaigrette, and decided it would be the jumping off point for tonight’s dinner.

Citrus Honey Vinaigrette

1 garlic clove, minced  1/2 tbsp grated onion
1/3 cup orange juice (about one orange juiced)
3 tbsp lime juice (I didn’t have lime juice, and just left it out this time and it was delicious)
2 tbsp honey
3/4 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/3 cup vegetable oil

Combine the above ingredients in a jar, and shake it up!

I didn’t have to look far for a recipe for some protein.  On the next page of my notebook was a recipe for honey glazed barbecued chicken.  I’m usually really good about writing down where I find recipes, but didn’t have anything written with this recipe. If anyone knows where it’s from, please let me know!

The chicken was so simple:

Honey Glazed Chicken

Combine the following and rub on the chicken:

2 tsp garlic powder
2 tsp chili powder
1/2 tsp onion powder
1/2 tsp coriander
1 tsp salt
1 tsp cumin

Grill the chicken, or broil if you don’t have a barbecue, and in the last few minutes of cooking brush the following glaze on the chicken.  Reserve some for drizzling on the finished chicken.

1/2 cup honey and 1 tbsp of cider vinegar

I’m not even exaggerating when I say this is the BEST salad I have ever had. EVER. If you try one recipe from this blog, try this one!

  6. The salad dressing sounds delicious! I feel triumphant if I manage to drizzle balsamic vinegar over my salad - for a Taurean, I'm a rubbish cook! ;o)
