What a LONG week! I had every intention of getting on here Thursday night...and then FRIDAY night...and finally - it's Monday. Whoops! Sometimes life just gets in the way of what I'd LIKE to be doing.
My food this week was rather boring, and I admit, Thursday and Friday I didn't do well with the whole eating healthy thing. I won't get into details, but let's just say it wasn't good.
I made the most delish homemade pizza Saturday night for dinner, and highly recommend it. Homemade ww pizza dough, fat free cream cheese, some smoked salmon, thinly sliced red onion, skim mozzarella cheese on top - OMG - to die for! Paired it with a simple spinach and peach salad and it was a great dinner (with leftovers for lunch Sunday!)
As much as I adore weekends, I don't so much like being out of a routine. I don't think I really ate breakfast yesterday or Saturday. Lunch was some nummy leftover pizza, and dinner was the most delicious white bean and chicken crockpot chili, which again, I highly recommend. Who can argue with throwing all of your ingredients in a crock pot at 10 am and having dinner ready to go at 5:30? Not this girl!
Lunch today include almonds and prunes (I know, I know, but I love them,) a kashi granola bar, some cantalope and a ww tortilla with some skim mozzarella cheese, spinach and smoked salmon quesadilla style.
After reading all over the blogosphere about breakfast cookies, I gave one of those a try this morning. I tend to resist the popular things in life. Wouldn't read Harry Potter when everyone loved them - eventually gave in and became obsessed. Wouldn't read Twilight - same story as the Harry Potter. Thought I'd hate Avatar, and went kicking and screaming with Mr. T, only to discover that it was Ahhh-Mazing. Are we seeing a trend here? Maybe these things are popular for a reason, and I should quit swimming against the current just for something to do! The breakfast cookie was super delicious - who woulda thunk it?
No work tomorrow, so I'm going to post my bran muffin recipe, which turned out to be fabulous, and not as dry as some of my low-fat baking recipes have been. I made chicken fajita soup tonight that will likely make an appearance tomorrow at lunch. Can you say "yummy?" It is so filling, and super easy to make - two things that make a good recipe great!
Off to finish cleaning up, but I might just come back and post that bran muffin recipe later :)
